Selecting The Right Chilli Recipes For Certain Crowds

By Stella Gay

Early settlers often ate meals at different times while on the trail, and cooks were tasked with serving meals that were hearty. Some people had little money on hand to eat lavishly, and cooks would prepare spiced stews that would keep hunger away for one more day. Some travelers would add ingredients to these dishes and these changes were saved as chilli recipes that were passed on to others on the trail.

As new settlers joined a wagon train, new ideas were mentioned and certain spices from various locales were added. Some of the spices added, such as jalapeno, were capable of burning the interior of the mouth. Other peppers were used alternately, to fit in with different tolerances. Certain parts of a recipe were kept in place simply because the ingredients would create a thick sauce that clung to other ingredients.

The basic ingredients found in these delicious stews will vary based on availability. The very basic ingredient that cooks use is a large sized bean. The types of beans that could be used in the mixture can be a northern bean, kidney bean or Navy bean. The preferred color of the bean is crimson to purple. The meat selection for the dish will influence the type of bean that is ultimately placed in the dish.

The method of cooking will have a direct influence on cooking time. These hearty stews can be prepared using a stove top that is powered by electricity or natural gas, a slow cooker, crock pot, or a pot hung on a spit over an open fire. The latter was popular among the settlers, and the cook prepared the meals from a chuck wagon. Some of those chefs chose to use left over coffee in the mixture as part of the flavor enhancers.

Many cooks choose to use a variety of tomatoes to control the flavor. Tomatoes can be steamed and canned for many years. Fresh tomatoes can be diced and added to the mixture, or chunks of the fresh tomato can be added to thicken the mixture. Some people will add canned green peppers and tomatoes into the mixture for added flavor.

Fresh vegetables provide the cooks with the opportunity to create a signature dish. Southern cooks like to add sweet onions to the pot. Fresh red onions can add color, and white onions offer a more pronounced flavor. For variety, some cooks will squeeze lemon juice into the mass, and add chopped scallions for contrast. A sprinkle of parsley, and a handful of celery will give the mixture some body.

Caution should be used when adding water to the cooking vessel because the mixture will have the tendency to resemble soup if too much water is added. If the recipe was initially created using a stove top burner, then water should be added at different times during cooking. Slow cookers do not allow moisture to evaporate so water should be used conservatively.

Dry ingredients will include lots of chilli powder which will be the ultimate base for the stew. Cayenne pepper will be added based on preferences. The meats used in the dish can include chunks of beef, ground beef, turkey, or pork. The fat content of each item should be monitored to ensure the dish is balanced at the end of the cook cycle. The dish can be served in a bowl filled with rice.
